Easy baking with children – Banana and chocolate chip muffins

If you’re looking for an easy recipe to bake with some little people to keep them entertained during lockdown then this is the recipe for you. We picked up some reduced bananas this week that were a bit past their best so I decided they would be perfect for baking with. After some searching I found this recipe which had good reviews and seemed perfect for making with my baking sidekicks as you literally pop all the ingredients in a bowl, mix it up and 25 minutes later have some delicious, moist muffins. It does however contain eggs and self-raising flour which despite the initial shopping craziness of lockdown having seemingly subsided are still in short supply in our part of Hampshire. I’m now rationing my plain flour so was happy to find these used self-raising flour (what crazy times we live in!)

Easter egg cookies

And so another 3 weeks of lockdown begins. My aim a few weeks ago was to try and blog more often. I wasn’t expecting these to be the circumstances that allowed me to do it. Today was the first rainy day in a very long time and with two toddlers to entertain I decided baking would provide some good afternoon entertainment. Should you have any leftover Easter eggs (I know with lockdown this could be a slim possibility but if not I’m led to believe there are some bargains to be had in the supermarkets) these are the ideal cookies to make. These cookies use white chocolate, plain chocolate and mini eggs so even if you don’t have any leftover Easter eggs you might be able to improvise with what you already have at home. These are very easy to make and only need one bowl, no resting time and only need one egg if you’re finding eggs are still in short supply.

Chocolate fudge crinkle biscuits

Well the world is a very different place since I last posted. Coronavirus, panic buying, social distancing and lockdown may have affected how you are cooking, baking and eating at the moment but hopefully you might be finding some solace in being in the kitchen. You may also be trying to entertain and educate some little people in which case I can highly recommend this recipe. I’ve been blessed with two little ladies who have luckily inherited their Mummy’s love of baking and this was the perfect afternoon activity for two three year olds who were desperate to be let loose in the kitchen! Also if you’ve not braved the shops or you’re finding it tricky to source ingredients, these use ingredients you are already likely to have at home. The only fresh ingredients they use are eggs.

Neapolitan Layer Birthday Cake

Somehow last week I became the proud mummy of three year old twins. They’re the reason I haven’t posted on here in an extremely long time but I hope to rectify that as Mr Birdie bought me a 6 month Bakedin baking subscription for Christmas so I’m hoping to get back to baking (although now with 2 eager assistants helping me!) When I asked the girls what they would like for a birthday cake, I was expecting answers along the lines of ‘Peppa Pig’, ‘Hey Duggee’ or ‘Paw Patrol’ – all current favourites in our house but instead was told that ‘yellow’ and ‘strawberry’ were required! I knew I wouldn’t have time to make 2 separate cakes (or enough people to eat 2 separate cakes) so it was time to get Pinterest-ing to find some ideas. In the end I decided that some kind of strawberry cake with yellow icing would probably be the best bet. Luckily, I then stumbled across this Tesco recipe for a Neapolitan layer cake which I thought would make a good option with some added yellow icing and some strawberries on top.

Oreo Millionaires

I spotted these Oreo Millionaires on Jane Patisserie’s Instagram page a couple of weeks ago and decided they definitely needed trying. I eventually managed to find time yesterday afternoon to give them a go and can confirm they are as good as they look (although I’m not sure I needed the hot chocolate I just had with one as well – I fear I may not sleep well after all the sugar!) I’ve made a few of her other recipes before and they’ve always worked well.

Triple chocolate brownies

On Sunday night we had a gathering of ‘The Supermums’ – otherwise known as the lovely group of friends I met attending NCT classes. It’s been a while since we managed a get together and luckily we managed to arrange a pizza night most of us could attend. I of course offered to bring something for pudding and the request was for something chocolatey – I’m not sure you can get a lot more chocolatey than these triple chocolate brownies from Delicious Magazine. They went down very well and are the perfect chocolate treat.

Salted butter and chocolate chunk shortbread

I spotted these shortbread via The Little Loaf’s Instagram page and thought to myself – those look good! After a bit of research I found that apparently these had been a bit of a worldwide phenomenon and had in the cookie and biscuit world ‘broken the Internet’. After a bit of research I found the recipe, which is by Alison Roman from her book Dining In. They are very, very good. They’re not quite shortbread but also not quite cookies but just the right mix of both. They are however quite salty so if you’re not a fan of salt it would probably be best to give them a miss.

Jaffa Cake Brownies

I love the combination of chocolate and orange so when I saw the recipe for these Jaffa Cake brownies on the Good Housekeeping website I knew I wanted to try them. The only thing stopping me was that I had seen in the recipe that they needed marmalade which isn’t something we usually have in the Little Birdie household. However, when Mr Birdie bought some for the little Birdies to try I decided it was definitely time to try them. There was a bake sale at one of our toddler groups this week for the charity Tommy’s (a fantastic charity which funds research into stillbirth, premature birth and miscarriage) so I decided they’d probably go down well with tired, sleep-deprived mums and that it was time to give them a go.

Easter Rocky Road

I know I’m a little late posting this at the end of the Easter weekend but like me you may have some leftover chocolate currently lurking in your house. Should you wish to share it rather than eat it this is the recipe for you. I made this Easter Rocky Road as an end of term treat for my colleagues for the last day of term. I’ve made Rocky Road before but this is a slightly different recipe. If making it for Easter you can always add an extra Easter touch with some Easter-themed sprinkles or marshmallows but it works just as well without. This is a recipe from Olive Magazine.

Crunchie bar salted caramel brownies

Gosh it’s been a long time since I managed to post a recipe on here. In my defence being a twin mummy keeps me busy. I’m also only in work 2 days a week now which means my audience for my bakes has been drastically reduced. Last weekend we were having a gathering of our NCT group to belatedly celebrate our babies’ first birthdays. I had seen this Sainsbury’s Magazine recipe a while ago, thought they looked amazing and promptly bought all the ingredients and then left them in the cupboard gathering dust for a good few months. So I decided our gathering was the perfect opportunity to put that right and give this recipe a go.
