Well here we are post Christmas in Lockdown 3. January has felt like 474 days rather than 31 days and the weather seems to be doing its best to add to the dull and dreary mood. So this week I decided a little motivational baking was needed to cheer up both me and my colleagues at school this week (as contrary to popular belief schools are not closed and teaching at the moment is pretty exhausting.) Shockingly we still had some mince pies in the cupboard (I’m putting this down to a lack of clotted cream to accompany them) so I decided to make Holly Bell’s mince pie brownies. I have made these for the last 3 years for various Christmas gatherings and for our neighbours but have never actually got round to writing them up as a blog post so I decided now was the time to put that right.

Blackberry and peanut butter swirl brownies

By some kind of miracle I’ve managed 2 bakes in the last week – mostly inspired by the stash of blackberries we’ve gathered on quite a few walks around our local area over the last few weeks. They’ve mostly come to an end now and I’m glad to have stashed some in the freezer but on Tuesday afternoon when I had 2 toddlers to entertain I was glad of the ones that were lurking in the fridge. I decided we’d give this Sainsbury’s Magazine recipe a go. Peanut butter and blackberry is not a combination that I’d initially think of but they do actually work and make a nice alternative to your usual apple and blackberry based autumnal bakes.

Triple chocolate brownies

On Sunday night we had a gathering of ‘The Supermums’ – otherwise known as the lovely group of friends I met attending NCT classes. It’s been a while since we managed a get together and luckily we managed to arrange a pizza night most of us could attend. I of course offered to bring something for pudding and the request was for something chocolatey – I’m not sure you can get a lot more chocolatey than these triple chocolate brownies from Delicious Magazine. They went down very well and are the perfect chocolate treat.

Jaffa Cake Brownies

I love the combination of chocolate and orange so when I saw the recipe for these Jaffa Cake brownies on the Good Housekeeping website I knew I wanted to try them. The only thing stopping me was that I had seen in the recipe that they needed marmalade which isn’t something we usually have in the Little Birdie household. However, when Mr Birdie bought some for the little Birdies to try I decided it was definitely time to try them. There was a bake sale at one of our toddler groups this week for the charity Tommy’s (a fantastic charity which funds research into stillbirth, premature birth and miscarriage) so I decided they’d probably go down well with tired, sleep-deprived mums and that it was time to give them a go.

Gosh it’s been a long time since I managed to post a recipe on here. In my defence being a twin mummy keeps me busy. I’m also only in work 2 days a week now which means my audience for my bakes has been drastically reduced. Last weekend we were having a gathering of our NCT group to belatedly celebrate our babies’ first birthdays. I had seen this Sainsbury’s Magazine recipe a while ago, thought they looked amazing and promptly bought all the ingredients and then left them in the cupboard gathering dust for a good few months. So I decided our gathering was the perfect opportunity to put that right and give this recipe a go.

Hot cross bun brownies

Happy Easter! It’s been quite a while since I last posted due to the fact I was ‘baking’ two very important people in my tummy. Whilst pregnant I was diagnosed with gestational diabetes which meant I had to cut back on sugary treats – not ideal when you write a baking blog! Just over two months ago I became ‘Mummy’ to two (yes – two, I was pregnant with twins) beautiful girls. The last two months have flown by in a haze of nappies, sleepless nights and cuddles but it has all been worth it. We are just about getting into a routine which has meant I have been able to ‘start’ thinking about baking. Last weekend I made these Mini Egg brownies to get myself back into the swing of things. I had seen this recipe for hot cross bun brownies on Pinterest and was keen to give them a go as they combine two of my favourite things. The recipe is by renowned chocolatier Paul A. Young and is from Delicious Magazine.

Terry’s Chocolate Orange brownies

Happy Christmas Eve to one and all! The Christmas holidays are now in full swing – hurray! To say ‘Happy Christmas’ and thank you to our neighbours for being what feels like our own parcel receiving service, myself and Mr Birdie decided some brownies would be a thoughtful gift. Mr Birdie suggested making some brownies with Roses or Quality Street however I decided to veto this in favour of these chocolate orange brownies as to me a Terry’s Chocolate Orange is also very Christmassy. They were well received and will hopefully be enjoyed over the next few days. This is a Jane’s Patisserie recipe. I’ve been following her for quite a while on Twitter and Instagram and would highly recommend checking out her recipes as they look delicious!

Cream cheese marble brownies

Yesterday gave me the opportunity to get my half term bake on. I’d spotted this Delicious Magazine via Twitter, pinned it to one of my Pinterest boards and decided today was the day to give it a go. At first, Mr Birdie was skeptical about the inclusion of cream cheese in a brownie (it would be sour according to him) but luckily after tasting them he decided it was indeed acceptable. These are quick and easy to whip up. We had them for dessert yesterday when we had some friends round for dinner – they make a tasty dessert especially when served with some strawberries to contrast with the richness.

Oreo Brownies

These were originally going to be Holly Bell’s Oreo peanut butter brownies but because I am terrible at reading recipes I hadn’t realised they needed Oreos with peanut butter (I had already bought Aldi’s equivalent of normal Oreos because I am cheapskate!) When I had a look a Peanut butter Oreos in our local Tescos I had to do a double take as they were £6! So then I was on the hunt for a recipe that used normal Oreos. I found this one by Lorraine Pascale that needed 5 eggs (which I thought was a bit extravagant) so decided against it. Then a couple of weeks ago whilst scrolling through my Instagram feed I spotted that Little Miranda Piggy had made some and posted the recipe on her website.
