Well it may be Spring but I’m not sure the weather is quite aware of this. It was a blustery, wild day in Hampshire yesterday – it was definitely not been feeling like Spring at all. We had our friends Simon and Louisa over for dinner so I made this sticky toffee pudding for dessert. With yesterday’s weather a comforting, warm pudding was definitely needed!

Carrot and walnut bundt cake
Oh cream cheese icing – why are you my nemesis? Why, every time I try to make you, do you turn into a runny mess instead of the thick icing you’re meant to be? I have tried on several occasions now to make cream cheese icing with not a lot of success. The only time I’ve really been successful was when I made Jo Wheatley’s carrot cake traybake. Every other time, I’ve ended up with runny icing that’s dripped off the cake or cupcakes I’ve made, to create a sea of icing. Sadly, this was another one of those situations. Luckily it wasn’t all bad and what it didn’t have in looks it made up for in its taste.

Banana and chocolate bread
One of my friends Mia, came round for dinner this week and in her honour I made this banana and chocolate bread. She is a big fan of any kind of banana cake and I had some overripe bananas so it seemed like a perfect match. I’ve said it many times before but I’ll say it again – I love the combination of chocolate and banana. This is a Delicious Magazine recipe that I spotted a little while ago.

3D Minion Cake – Take Two
This isn’t a new post but I wanted to share some of the photos of this weekend’s bake. I was asked by one of our lovely learning support assistants at school if I would make a Minion cake for her son’s fifth birthday. I was of course up for the challenge! You can read about my first attempt at making a 3D Minion cake here. I used the same recipe but this time decided to give covering the whole cake in fondant icing a go. It was a little tricky to say the least and I did require Mr Birdie’s help. Luckily it turned out reasonably well and the birthday boy was pleased!
