Jaffa Cake Brownies

I love the combination of chocolate and orange so when I saw the recipe for these Jaffa Cake brownies on the Good Housekeeping website I knew I wanted to try them. The only thing stopping me was that I had seen in the recipe that they needed marmalade which isn’t something we usually have in the Little Birdie household. However, when Mr Birdie bought some for the little Birdies to try I decided it was definitely time to try them. There was a bake sale at one of our toddler groups this week for the charity Tommy’s (a fantastic charity which funds research into stillbirth, premature birth and miscarriage) so I decided they’d probably go down well with tired, sleep-deprived mums and that it was time to give them a go.

Easter Rocky Road

I know I’m a little late posting this at the end of the Easter weekend but like me you may have some leftover chocolate currently lurking in your house. Should you wish to share it rather than eat it this is the recipe for you. I made this Easter Rocky Road as an end of term treat for my colleagues for the last day of term. I’ve made Rocky Road before but this is a slightly different recipe. If making it for Easter you can always add an extra Easter touch with some Easter-themed sprinkles or marshmallows but it works just as well without. This is a recipe from Olive Magazine.

Crunchie bar salted caramel brownies

Gosh it’s been a long time since I managed to post a recipe on here. In my defence being a twin mummy keeps me busy. I’m also only in work 2 days a week now which means my audience for my bakes has been drastically reduced. Last weekend we were having a gathering of our NCT group to belatedly celebrate our babies’ first birthdays. I had seen this Sainsbury’s Magazine recipe a while ago, thought they looked amazing and promptly bought all the ingredients and then left them in the cupboard gathering dust for a good few months. So I decided our gathering was the perfect opportunity to put that right and give this recipe a go.

Chewy chocolate, oat and raisin cookie bars

Is it a cake? Is it a cookie? Well it’s a chewy cookie bar. The couple who live across the road from us have just had a baby girl so we decided now was time to make friends. We popped over on Thursday afternoon and I decided it would be good to take a baked offering with us. I thought these cookie bars would be good as they have oats for energy and milk production, chocolate because when you’re sleep deprived chocolate is very necessary and raisins to make you feel like you’re having something healthy!

Banana and chocolate yogurt cake

I made this over a month ago but have only just got round to posting it – my computer wouldn’t show me images when I put the SD card from the camera in so it made it tricky to finish it. Luckily my Dad came to visit a few weeks ago and sorted it out for me – thank goodness for dads! At the time I seemed to be eating a lot of cake (although that hasn’t really changed!). I think I was making up for lost time when I couldn’t eat that much when I was pregnant or it’s all the extra calories I was burning running around after two little people (and still am burning!) I had been fancying some banana bread so when we had some very brown bananas (Mr Birdie nearly through them in the bin!) I decided it was time for some more baking. I’ve made many different banana bread recipes before and banana and chocolate is always a winning combination. This recipe would be perfect for baking with children as you use a yogurt pot to measure most of the ingredients so there’s no need for scales. It’s quite good fun measuring everything out and would be ideal for little hands who aren’t used to working with scales. It’s a recipe from Delicious Magazine.

Hot cross bun brownies

Happy Easter! It’s been quite a while since I last posted due to the fact I was ‘baking’ two very important people in my tummy. Whilst pregnant I was diagnosed with gestational diabetes which meant I had to cut back on sugary treats – not ideal when you write a baking blog! Just over two months ago I became ‘Mummy’ to two (yes – two, I was pregnant with twins) beautiful girls. The last two months have flown by in a haze of nappies, sleepless nights and cuddles but it has all been worth it. We are just about getting into a routine which has meant I have been able to ‘start’ thinking about baking. Last weekend I made these Mini Egg brownies to get myself back into the swing of things. I had seen this recipe for hot cross bun brownies on Pinterest and was keen to give them a go as they combine two of my favourite things. The recipe is by renowned chocolatier Paul A. Young and is from Delicious Magazine.

Terry’s Chocolate Orange brownies

Happy Christmas Eve to one and all! The Christmas holidays are now in full swing – hurray! To say ‘Happy Christmas’ and thank you to our neighbours for being what feels like our own parcel receiving service, myself and Mr Birdie decided some brownies would be a thoughtful gift. Mr Birdie suggested making some brownies with Roses or Quality Street however I decided to veto this in favour of these chocolate orange brownies as to me a Terry’s Chocolate Orange is also very Christmassy. They were well received and will hopefully be enjoyed over the next few days. This is a Jane’s Patisserie recipe. I’ve been following her for quite a while on Twitter and Instagram and would highly recommend checking out her recipes as they look delicious!

Pear and hazelnut muffins

I do love the combination of pear and chocolate. I’ve made a few pear and chocolate based recipes in the time I’ve been writing this blog including a pear and white chocolate muffin loaf, a squidgy pear and chocolate spread cake and chocolate and pear brownies. I had a couple of pears that needed using and had seen this Martha Collison recipe for Waitrose so decided to give them a go.

Cream cheese marble brownies

Yesterday gave me the opportunity to get my half term bake on. I’d spotted this Delicious Magazine via Twitter, pinned it to one of my Pinterest boards and decided today was the day to give it a go. At first, Mr Birdie was skeptical about the inclusion of cream cheese in a brownie (it would be sour according to him) but luckily after tasting them he decided it was indeed acceptable. These are quick and easy to whip up. We had them for dessert yesterday when we had some friends round for dinner – they make a tasty dessert especially when served with some strawberries to contrast with the richness.
