Gosh it’s been a long time since I managed to post a recipe on here. In my defence being a twin mummy keeps me busy. I’m also only in work 2 days a week now which means my audience for my bakes has been drastically reduced. Last weekend we were having a gathering of our NCT group to belatedly celebrate our babies’ first birthdays. I had seen this Sainsbury’s Magazine recipe a while ago, thought they looked amazing and promptly bought all the ingredients and then left them in the cupboard gathering dust for a good few months. So I decided our gathering was the perfect opportunity to put that right and give this recipe a go.

Frozen raspberry and honeycomb pie

I saw this recipe in this month’s BBC Good Food magazine and thought it looked interesting. Today we had some of our good friends round for a barbecue and decided this would make a good dessert. Unfortunately, the weather decided it was not going to agree and we had to make a mad dash inside when it started raining. This was a shame as this dessert would be much more suited to warm, sunny, al fresco dining rather than sitting in a lounge with the rain beating at the windows!

Honeycomb Crunchies

I found the recipe for these in a Good Food magazine I was reading at my mother-in-laws house last week during a few days holiday back home in Devon. I liked the look of them and found the recipe on line on the BBC website which you can find here (it’s a Mary Berry one from the Great British Bake Off for Comic Relief). I’ve never made honeycomb before and was a little apprehensive to say the least. I didn’t fancy ruining any of our saucepans! It was actually surprisingly easy especially as I received a sugar thermometer in the post yesterday as a birthday present (thanks Dot and Martin!) which would help with getting the mixture to the right temperature. They have a crunchy texture and my husband has just given them his seal of approval so I would definitely recommend.
