Jaffa Cake Brownies

I love the combination of chocolate and orange so when I saw the recipe for these Jaffa Cake brownies on the Good Housekeeping website I knew I wanted to try them. The only thing stopping me was that I had seen in the recipe that they needed marmalade which isn’t something we usually have in the Little Birdie household. However, when Mr Birdie bought some for the little Birdies to try I decided it was definitely time to try them. There was a bake sale at one of our toddler groups this week for the charity Tommy’s (a fantastic charity which funds research into stillbirth, premature birth and miscarriage) so I decided they’d probably go down well with tired, sleep-deprived mums and that it was time to give them a go.

Terry’s Chocolate Orange brownies

Happy Christmas Eve to one and all! The Christmas holidays are now in full swing – hurray! To say ‘Happy Christmas’ and thank you to our neighbours for being what feels like our own parcel receiving service, myself and Mr Birdie decided some brownies would be a thoughtful gift. Mr Birdie suggested making some brownies with Roses or Quality Street however I decided to veto this in favour of these chocolate orange brownies as to me a Terry’s Chocolate Orange is also very Christmassy. They were well received and will hopefully be enjoyed over the next few days. This is a Jane’s Patisserie recipe. I’ve been following her for quite a while on Twitter and Instagram and would highly recommend checking out her recipes as they look delicious!

Spiced chocolate and orange hot cross buns

Happy Easter one and all. I hope you are enjoying the extended weekend by spending it with friends and family, eating many chocolate eggs and indulging in one or two hot cross buns whilst managing to avoid the hideous weather that seems to have descended on us. I’d never made hot cross buns before making these. In my eyes no-one can beat my Dad’s so I was a little nervous giving these a go. I’d seen this Delicious Magazine recipe last year and saved it to my Easter Pinterest board. Last weekend, I decided I fancied doing a little Easter inspired baking and decided to give them a go.

Chocolate Orange Cupcakes

This is a belated post as I originally made these a couple of weeks ago. One of my previous headteacher’s has just retired and the school held an afternoon tea as a celebration. I was asked to make some cakes (as it turned out they weren’t required much to the delight of the staff at my current school – they went down well on the last day of term when chocolate and sugar were very much needed!)

These were made in a rush on a Tuesday night so I haven’t got step-by-step photos but I will post the recipe should anyone be interested in making them. I openly admit that I find cupcakes tricky. I never seem to be able to get them light and fluffy enough – one day I’m sure I’ll succeed! If anyone has any tips I’d be very grateful! I used a Primrose Bakery recipe from the Cupcakes From the Primrose Bakery book.
