I made these during the Easter holidays and completely forgot about posting this – oops! It was lovely to be able to enjoy 2 weeks of no work rather than trying to cram everything into a week when it’s half term. I whipped these up during an afternoon when the weather was very changeable with sunshine one minute and heavy showers the next. I fancied a spot of cookie baking and after a quick flick through some cookery books and my Pinterest boards I found this recipe in my Great British Bake Off ‘How To Bake’ book.

Oat and raisin cookies – Take Two

This week bakers around the country rejoiced – The Great British Bake Off is back! If you watched you will know that next week is biscuit week. Inspired by this and today’s terrible weather I decided today was definitely a cookie baking kind of day. I also decided that it’s time to get back to some of my cookbooks. I am forever pinning recipes I have found on the Internet to my Pinterest pages which means I neglect my stack of cookbooks.

Mini Egg Brownies

Yesterday was the last day of term at school – hurray! Today is officially the start of the Easter holidays which means two weeks of relaxing and lots of baking awaits. To keep us all going at school I promised to make these mini egg brownies. They were a huge success and were gone very quickly. They were declared even better than the Creme Egg brownies I made a couple of weeks ago. They are indeed very yummy. I was a little sceptical about how crunchy mini eggs would work with squidgy brownie but the mini eggs soften after baking. They would make a wonderful addition to any Easter tea.

This is a Jo Wheatley recipe that you can find on her wonderful blog Jo’s Blue Aga here. You will need an 8 x 8 inch tin. The bonus of this recipe is that it only needs one bowl so you can save on the washing up! Chilling the mini eggs beforehand will help to stop them from cracking.

Vintage Chocolate Chip Cookies

I’m not sure what exactly makes these ‘vintage’? According to the BBC Good Food website this is a ‘retro’ recipe (whatever that means!) Maybe they’re meant to take you back to your childhood when enjoyed with a glass of milk? Anyway, they are yummy and definitely hit the the chocolately, sugary spot.  It has been a busy week at work (with another busy one coming up) so I decided I need to bake something to say thank you to my colleagues for their enthusiasm towards the maths week I organised but to also keep us going through the forthcoming busy days. I had said I would make Cadbury’s Creme Egg brownies but with the sunshine today I felt something lighter was in order so decided to make this BBC Good Food recipe.

The bonus of this recipe is that it only needs one bowl and can be rustled up pretty quickly. The recipe makes approximately 20 soft and yummy cookies (depending on size).

Well 2013 is nearly at an end. I would like to wish all my readers a very happy new year. 2013 was the year I started writing this blog and I have really enjoyed recording all my baking adventures. I hope everyone had a lovely Christmas. I was very lucky to receive a personalised ‘Little Birdie Baking Blog’ apron from my brother and sister-in-law (thanks Ian and Steph!) as one of my presents. It has already been used to make today’s post!
