Chewy chocolate, oat and raisin cookie bars

Is it a cake? Is it a cookie? Well it’s a chewy cookie bar. The couple who live across the road from us have just had a baby girl so we decided now was time to make friends. We popped over on Thursday afternoon and I decided it would be good to take a baked offering with us. I thought these cookie bars would be good as they have oats for energy and milk production, chocolate because when you’re sleep deprived chocolate is very necessary and raisins to make you feel like you’re having something healthy!

Chocolate chip, oat and raisin cookies

It is officially half term – hurray! I made these last week to keep us going through the last week of term. My thinking was that if they have oats and raisins in them that surely makes them healthy?!? This is a Donal Skehan recipe that you can find here. These cookies are chewy and crumbly in texture. If you don’t have any dark chocolate or raisins you can easily swap them for whatever else you have. I think cranberries and white chocolate would make a great combination.

Oat, pecan and raisin cookies

Following on from my previous post I have been on a bit of a cookie making mission recently. I made these last weekend as we were off to visit our friends Simon and Louisa who have recently welcomed baby Esme to their family. I thought they might be in need of a sweet treat to keep them going so decided to give these a go. I have made lots of other oat and raisin cookies before and they are a particular favourite of Mr Birdie. My favourite recipe is this Hummingbird Bakery recipe. This recipe is a Jo Wheatley one from her Home Baking book. I have made her oat and raisin cookies before but this recipe is slightly different and does include the addition of pecan nuts.

Oat and raisin cookies – Take Two

This week bakers around the country rejoiced – The Great British Bake Off is back! If you watched you will know that next week is biscuit week. Inspired by this and today’s terrible weather I decided today was definitely a cookie baking kind of day. I also decided that it’s time to get back to some of my cookbooks. I am forever pinning recipes I have found on the Internet to my Pinterest pages which means I neglect my stack of cookbooks.

Oatmeal Raisin Cookies

I made these last week for my lovely friend Emma who is currently trying to keep to a dairy free diet. I had spotted this recipe in the April edition of Good Food and you can find the recipe online here. They use vegetable oil instead of butter so are perfect if you’re trying to cut dairy out. They are soft and chewy but sadly mine ended up looking a bit more like rock cakes compared to cookies. You pour water over the raisins first to help them plump up and stop burning in the oven which was a technique I hadn’t used before.

This recipe will make approximately 25 cookies. They will keep in an airtight container for up to 3 days – if they last that long!

Chocolate Banana Streusel Muffins

This is a bit of a belated post as I made these about 3 weeks ago. I always seem to have some overripe bananas hanging around as I’m not a fan of them when they start to go brown on the outside. This means I’m always on the lookout for recipes that will use them up. I spotted this recipe on Pinterest a couple of months ago and decided to give it a go as I had all the ingredients already. Chocolate and banana is a combination that can’t go wrong and if you add an oaty topping you can almost believe they’re good for you! I think these would be great for brunch but they will work just as well at any other time of the day with a cup of tea or coffee.

This recipe will make 8 muffins. As it is an American recipe the measurements are in cups. With hindsight after tasting these I think you could probably up the amount of banana as when I tried one the banana isn’t that strong so if you like a stronger banana flavour maybe try adding two bananas.

Christmas Is Coming Part 2 – Triple Chocolate Cranberry Oatmeal Cookies

As promised another cranberry based cookie recipe. These cookies are packed full of Christmas flavour. Cinnamon – check. Cranberries – check. Chocolate – check. I made these last year and they were well received so decided to give them another go. The recipe is from the blog ‘What Megan’s Making’ which I am a fan of. You can find the recipe here. It is an American recipe so you will need some cups for measuring out the ingredients. It also gave me an opportunity to try out my new cookbook stand that I picked up in TK Maxx this week.

Therapy Time – Oat and Raisin Cookies

It has been a stressful week in the Little Birdie kitchen and an even more stressful Saturday. Why does buying a house have to be such a horrendous experience? In an attempt to take my mind off things things I decided to make some cookies. Before Christmas I went on a cookie making splurge but haven’t really made any since. This is a Hummingbird Bakery recipe from The Hummingbird Bakery Cookbook. I have made them twice before for work colleagues and they have always been well received. Plus they’ve got raisins and oats in them so surely they must be healthy? I’m currently enjoying one with a mug of warm milk before bed! This recipe makes 20ish (depending on how big or small you like your cookies – I managed to make 21 with this batch).
