Sticky plum and custard cake

Well it seems that if you blinked you will have missed summer. Autumn is well and truly on its way and with that the plum tree in our garden seems to be past its best. I always feel it’s a waste if I don’t manage to use at least some of its fruit. It is a yellow plum tree so can it be tricky to find recipes. In the past I have made jam using the fruit which I then used in a Victoria sponge and an almond and plum slice. I was determined that this year I would use some of the fruit in a bake. I had spotted this Delicious Magazine recipe a while ago and saved it to my Pinterest page as it used yellow plums and decided it was time to give it a go.

Bramley Apple Cake with Custard Icing

It seems every day is now some sort of named day. Chocolate Day, Carrot Day and Egg Day are all ones I have seen recently. Well, today is no exception and it is Apple Day. Following a bit of research I discovered Apple Day was launched in 1990 by Common Ground and was intended to be both ‘a celebration and a demonstration of the variety we are in danger of losing, not simply in apples, but in the richness and diversity of landscape, ecology and culture too.’ I made this cake a couple of weeks ago and decided that as it featured apples today would be a good day to finally get round to posting it!

Custard Cream Blondies

Following on from my last post of Oreo brownies I decided to give another biscuit-based bake a go. I’d seen this recipe on the Olive magazine website for custard cream blondies and thought it looked interesting. I am currently in training for the 2016 London Moonwalk and thought these would make a good post-5 mile training walk reward.

Rhubarb & custard cake

Today was World Baking Day and to celebrate I decided to try out this BBC Good Food rhubarb and custard cake. I had seen the recipe in a teatime baking recipe booklet I received with the April issue. Luckily, rhubarb is part of Aldi’s ‘Super 6′ and is currently only 59p – a bargain! I love rhubarb so have always got my eyes open for any baking recipes that include it. My last attempt at baking something with rhubarb was the infamous ‘Rhubarb omelette incident’. Hopefully today’s effort will banish any memories of this disaster! I’ve got some rhubarb and some custard left over so might try some rhubarb and custard muffins towards the end of the week.
