Now, I’m not normally one to get really excited about a vegetable based cupcake but these were goooooood (and I mean really good). So good I had two in fact! After trundling around Sainsbury’s on Saturday evening and being persuaded by Mr Birdie to buy a pumpkin to make soup (which turned out to be pretty horrible) because they were cheaper than a butternut squash I was left with a whole lot of pumpkin to use up. Luckily I had seen this BBC Good Food recipe so off I set.

Carrot and walnut bundt cake

Oh cream cheese icing – why are you my nemesis? Why, every time I try to make you, do you turn into a runny mess instead of the thick icing you’re meant to be? I have tried on several occasions now to make cream cheese icing with not a lot of success. The only time I’ve really been successful was when I made Jo Wheatley’s carrot cake traybake. Every other time, I’ve ended up with runny icing that’s dripped off the cake or cupcakes I’ve made, to create a sea of icing. Sadly, this was another one of those situations. Luckily it wasn’t all bad and what it didn’t have in looks it made up for in its taste.

Carrot cake traybake

When our lovely admin lady at work offered me some carrots for my rabbit April – I gladly took her up on the offer whilst telling her that although some of them would find their way to April I would also be making carrot cake. I saw this Jo Wheatley recipe a while ago and thought it would be a good opportunity to try it out – especially as carrot cake is one of my colleague’s favourite cake.

Apple Crumble Cupcakes

It’ has been ages since I made cupcakes. I have mentioned before that Mr Birdie likes to joke that cupcakes are all I make – well hopefully this blog has proved him wrong! I made these once before and Mr Birdie declared them ‘the best cupcakes I’d ever made’! I decided to make these as I had a couple of Bramley apples that needed using up.

These cupcakes are a combination of recipes – the cupcake recipe is from Eric Lanlard’s Cox, Cookies & Cake book and the cream cheese frosting and crumble topping come from the Cup O’ Sugar blog. If I had had lots of time I would have filled them with custard as my Dad gave me a cupcake filler gadget for Christmas that I am still waiting to try out but sadly time flew by today. I made 18 cupcakes from the mixture but this will probably depend on how much apple mixture you make.
