Oreo Brownies

These were originally going to be Holly Bell’s Oreo peanut butter brownies but because I am terrible at reading recipes I hadn’t realised they needed Oreos with peanut butter (I had already bought Aldi’s equivalent of normal Oreos because I am cheapskate!) When I had a look a Peanut butter Oreos in our local Tescos I had to do a double take as they were £6! So then I was on the hunt for a recipe that used normal Oreos. I found this one by Lorraine Pascale that needed 5 eggs (which I thought was a bit extravagant) so decided against it. Then a couple of weeks ago whilst scrolling through my Instagram feed I spotted that Little Miranda Piggy had made some and posted the recipe on her website.

Lemon buttermilk loaf

So last week when it was Shrove Tuesday Mr Birdie bought lemons. I too bought lemons (a lack of communication on my part – oops!) which meant we had a lot of lemons in the house. Luckily Jo Wheatley posted this recipe on her fabulous website ‘Jo’s Blue Aga’ (if you’ve never checked it out ‘d highly recommend having a look). I’ve said before that I’ve always had great success with Jo’s recipes and I’m happy to say this was the case again. This is a very easy recipe as you simply put all the ingredients in a mixer and mix until combined.

Chocolate chip, oat and raisin cookies

It is officially half term – hurray! I made these last week to keep us going through the last week of term. My thinking was that if they have oats and raisins in them that surely makes them healthy?!? This is a Donal Skehan recipe that you can find here. These cookies are chewy and crumbly in texture. If you don’t have any dark chocolate or raisins you can easily swap them for whatever else you have. I think cranberries and white chocolate would make a great combination.

Treacle apple tart

It has been a rather crazy week of work: reports, data, lesson observations and meetings have meant my evenings have been taken up with work so I’m only just getting round to writing this up. I made this last weekend as we had friends round for Sunday lunch. Mr Birdie had some apples he’d bought and then forgotten about that needed using up and after a little research I found this BBC Good Food recipe for treacle apple tart.
