Mincemeat

Yesterday was ‘Stir-up Sunday’. The last Sunday before Advent where traditionally, families gather together in the kitchen of their homes to mix and steam Christmas pudding. It’s also the day lots of people choose to make their Christmas cake. I’m not a fan of dark, fruit cakes so don’t make one however I have been investigating the possibility of making a ‘White’ Christmas cake this year although this will be nearer to Christmas. We spend Christmas day with our combined families at Mr Birdie’s family home so I’m lucky not to have to worry too much about catering for Christmas day which also means I don’t need to worry about making Christmas pudding. I didn’t want to miss out on ‘Stir-up’ Sunday so decided to have a go at making my own mincemeat. I decided to use Jo Wheatley’s recipe which you can find on her blog here. I used slightly different quantities which I found on another blog.

Poppy and sunflower seeded rolls

I’m not really a fan of sandwiches so in the autumn and winter I like to take soup and a bread roll to work for my lunch. I used to buy part-baked rolls which I’d bake every morning so I’d have a fresh roll at lunch time. As I’ve become a little bit more confident in making bread, I decided I would give making some of my own rolls a go. After doing a little bit of research I found this recipe for poppy and sunflower seeded rolls on the Baking Mad website. I was quite pleased with how they turned out although I found their texture a little dense which could either be down to the recipe or my baking!

Carrot cake traybake

When our lovely admin lady at work offered me some carrots for my rabbit April – I gladly took her up on the offer whilst telling her that although some of them would find their way to April I would also be making carrot cake. I saw this Jo Wheatley recipe a while ago and thought it would be a good opportunity to try it out – especially as carrot cake is one of my colleague’s favourite cake.

Spiced Dorset apple traybake

The weather has been decidedly autumnal this weekend with endless showers interspersed with beautiful sunshine. I picked up some Bramley apples whilst shopping and had originally thought that I would make a crumble with them. However, I then decided that I would make something to take to work tomorrow as we have a training day and will need something to keep our brains going as we tackle computer programming! After a bit of research on Pinterest I decided to bake something based on Dorset apple cake. I had spotted this Marry Berry recipe for a spiced Dorset apple traybake a few months ago.
