3D Minion Cake

About a month ago I was asked if I could make a Minion cake for the 3rd birthday of Finn, the son of one of my friends. ‘Of course!’ was my reply followed by ‘How about a 3D one?’ I was thrilled and honoured to be asked and knew this was an important task. After quite a bit of research I had a basic idea of what I wanted to do. Luckily, Pinterest and YouTube are full of tutorials. I collected them altogether on a Pinterest board that you can find here. There are lots of different versions. I opted to cover my Minion in buttercream rather than fondant as I’m not overly familiar or confident in working with fondant and then decided to go for a single eye along with some arms and some overalls. I was amazed at how well it turned out given that I’ve never tried anything like this before.

Classic Victoria Sandwich

I made this cake nearly a month ago now but due to life being a little chaotic (the joys of being a teacher such as parent’s evening, governor meetings and residentials to the Isle of Wight!) it’s only now it’s half term that I’ve found the time to catch up on a few posts. I wanted to make a classic Victoria sandwich to showcase the vanilla and plum jam I made recently. We had a training day at school, which I was leading, so needed something to keep everyone happy! I’ve made a few Victoria sandwiches in my time and have always been lucky to have not experienced any disasters. I decided to opt for a Jo Wheatley recipe from ‘A Passion for Baking’. There are lots of different options for filling your cake such as buttercream, fresh cream and fresh fruit. Some people will insist it should only be filled with jam with a sprinkling of caster sugar on the top. I opted for buttercream with my homemade jam. It certainly went down well at school and was gone within 15 minutes!

Blackberry jam crumble shortbreads

I received John Whaite’s ‘John Whaite Bakes At Home’ for my birthday in August and until recently had not had the chance to try out any of the recipes. One of the recipes that had caught my eye was this blackberry jam crumble shortbread recipe. I love blackberry recipes and have been disappointed that I’ve been so busy that I’ve not been able to try anymore recipes other than this recipe and the autumn traybake I made back in August.

Raspberry millefeuilles

I am a HUGE fan of The Great British Bake Off. Back in the summer I saw on Twitter that the production company behind the spin off, An Extra Slice, were looking for keen bakers to be members of the audience. I quickly sent off an email, not expecting to hear anything back, but soon received a reply asking me to come and watch the show. After eventually finding a date a could do, I didn’t think much more about it until I had an email last week telling me it was patisserie week. My first thought was ‘Aaaaaahhh I know nothing about patisserie!’ After having a look through some recipe books and trawling the Internet I decided upon millefeuilles.
